Shag Rock Sausage Company was established in 2007 to do one thing- to craft a great tasting Ukrainian style smoked pork and garlic sausage (kubasa)- the good old fashioned  way,  the way I remembered it tasting growing up, and strictly WITHOUT the use of nitrites and nitrates. After 18 months of testing, tasting, tweaking  - we believe we've got it- the texture, the look, the feel in the mouth- the gentle smoked flavour using Kanuka to attain just the right colour, flavour and aroma. The addition of peperivka (chili infused whisky) is an old tradition in the Ukraine. Happy Pigs Make Happy Sausage.

We didn't start out to create a gluten free sausage, but that is another great benefit- you get natural meat and great taste without any filler or binder, and the fact we pre-cook our KUBI™ means it's ready to eat right out of the package. We've had feedback from moms who feed it to their babies and young children- and the kids love it too!

 

Shag Rock KUBI™ can be served hot — boiled, baked, grilled or BBQ' d. We like it the way Grandma served it to us- sliced on the angle, eaten cold on a cracker with a dash of horseradish or mustard.

 

It can be cooked in soups, baked with sauerkraut, or added to pasta & bean dishes, stews and casseroles. We believe that Shag Rock KUBI™ is the most versatile sausage in the world. It is good for breakfast, lunch, dinner or snacks.

 

KUBI™ is vac-packed right after smoking. This means we can deliver it right away to our customers.


Part of the food and safety requirements is rigorous scientific testing by a certified lab and we we can confirm a 3 week refrigerated shelf life. It's recommended to consume within 2-3 days after opening. Honestly- you won't be storing this sausage in your fridge- it's going to disappear as soon as you get it home..

We deal with farmers who treat their animals well and farm to the highest SPCA standards. We support that and will only buy pork from happy farmers with happy pigs.

 

Because many New Zealanders have really not been exposed to the eastern European style Kubasa, we decided to make Kubasa easier to say and more fun to remember- so we've adopted the Albertan's tradition and nicknamed our kubasa similar to their spelling of Kubby or Kubbie- simply KUBI™.  Based on the smiles from the people of all ages who do buy our KUBI™, it means "tastes great".

FAQ

Q: How do I cook it?
A:  There are several methods to heat your stick of KUBI™ once you’ve got them home.
        • Method One: Place your KUBI™ into a small amount of boiling water (just to cover) for about 5 minutes.
        • Method Two: Throw your KUBI™ on your BBQ and heat through. 
        • Method Three: Place in a steamer or rice cooker and steam until hot.
        • Method Four: Microwave until heated through.
        •Method Five: Chop into a pasta sauce
        •Method Six: Carefully insert a long skewer or sharpened twig and slowly roast over the embers of your campfire (or even inside on your open fire for a taste of the great outdoors).

Q: Is it raw?
A: No, KUBI™ is pre-cooked and kanuka smoked and can be eaten as is, out of the fridge, warmed, or heated through.
